Sushi is an ancient art, embodying perfection in simplicity and a pure culinary experience. In Milan, there are two places where you can discover the full mastery of Japanese cuisine: the Michelin-starred IYO Experience restaurant and the newly opened sushi bar IYO Omakase. At IYO Omakase, you can admire the Porta Nuova skyline while enjoying nigiri prepared according to the traditional Edomae-zushi style, along with authentic Japanese cuisine samples. Both establishments are creations of Claudio Liu, a young entrepreneur who also leads AALTO, a gourmet restaurant with a creative and international approach, and AJI, a quality Asian cuisine delivery and take-away service. Sai Fukayama from Tokyo is the invaluable assistant to Masashi Suzuki, the sushi master at IYO Omakase and supervisor at IYO Experience. He is a dynamic and lively personality with a fluid yet rigorous craftsmanship. With him, we learned how to prepare the perfect sushi rice and various ways to savor this exquisite and almost sacred Japanese dish.
