Preparation

How to prepare Ginger chicken

To prepare the ginger chicken, start by cleaning the chicken. Remove fat and small bones 1 and cut the chicken into bite-size pieces about 1 1/8 in (3 cm) 2. Transfer them to a baking dish and pour in about 3 tbsp of extra virgin olive oil (40 g) 3.

With the help of a spoon or a paring knife, remove the skin of the ginger 4. Grate about 1 oz of ginger (30 g) directly into the baking dish with the chicken 6 and add one clove of garlic, crushed or finely chopped 6.

Season with soy sauce 7 and millefiori honey 8. Cover with plastic wrap and let the chicken marinate for 30 minutes in the refrigerator 9.

Meanwhile, prepare the sauté by cutting into thin strips about 3/4 oz of ginger (20 g) and the fresh chili 11. Put them in a pan together with about 2 tsp of extra virgin olive oil (10 g) 12.

Brown for 5 minutes 13, then lay the pieces of chicken in the pan without overlapping them 14. Let cook over medium-high heat until golden on the bottom; it will take about 5 minutes 15.

After this time, turn the chicken 16 and deglaze with the lemon juice 17. Continue cooking over medium-high heat for another 5 minutes 18.

With the heat off, finish with grated lemon zest 19 and finely chopped chives 20. Your ginger chicken is ready to be served 21!
