Pasta with Sausage and Stracchino

PRESENTATION

Pasta with sausage and stracchino is, I gotta say, a real crowd-pleaser from Central and Northern Italy. You know, where they really know their way around a comforting bowl of pasta. Seriously good stuff. The combo of juicy Italian sausage and the ultra-creamy stracchino cheese makes this dish super super hard to resist. You get an amazing mix of flavors—crispy sausage edges and silky, moist cheese sauce. And look, it's kinda like a cousin to other well-loved Italian pasta recipes, like pasta alla Norcina from Umbria or pasta alla Monzese from Lombardy. They both use regional sausages and cheeses to keep things rich and satisfying.

What really sets pasta with sausage and stracchino apart? It's how the stracchino—super soft and just a bit tangy—melts in, turning everything into a dreamy, creamy bowl of comfort food. Feels a little special but doesn’t take forever to make, which is great.

Regional versions of this creamy sausage pasta pop up all over Northern and Central Italy. Some families even swap in cheeses like taleggio or gorgonzola for a twist. But, I mean, there’s something about the mild, almost buttery flavor of stracchino that just works so well with sausage. Especially when you want a fast meal that still tastes like it came straight out of a trattoria. Fast prep is, like, actually a big part of the tradition here. These Italian pasta recipes are made for busy weeknights or any time you want easy pasta dishes with maximum flavor.

Fans of penne ai quattro formaggi or spaghetti with burrata cream will totally get the appeal. Everything comes together quickly and still gives you that stick-to-your-ribs, melt-in-your-mouth texture. Plus, this sausage and stracchino pasta recipe goes great with other quick dinner ideas from Italy. You can always mix things up with different shapes or even toss in some veggies if you want. It’s the kind of dish you’ll want to keep coming back to—simple, tender, and packed with all the good stuff that makes Italian comfort food so popular. And you know what? You really can't go wrong.

How to prepare Pasta with Sausage and Stracchino

To make pasta with sausage and stracchino, first place a pot full of water on the stove and salt it when it boils, as it will be needed for cooking the pasta. Place the crumbled sausage without the casing in a pan 1, sauté it for 2-3 minutes, then add the peeled garlic 2 and olive oil 3.

Continue cooking for another two minutes. Remove the garlic and keep warm 4. Cook the pasta for the time indicated on the package. Before draining the pasta, add the stracchino to the pan with the sausage 6.

Pour the pasta into the pan as well 7, add a little cooking water 8, and stir to combine and melt the cheese. Season with pepper to taste 9.

Flavor with chopped herbs (thyme, rosemary, and sage) 10, stir one last time 11, and serve the pasta with sausage and stracchino piping hot 12.

Storage

We recommend consuming the pasta with sausage and stracchino immediately, while hot: the cheese tends to solidify as it cools.

Freezing is not recommended.

Advice

The dish is very flavorful, so it's not necessary to add salt. If you don't like stracchino, try our Paccheri cheese, pepper and sausage.
