Lactose-free cookies 10.5 oz (300 g) - dry
Coconut oil 6 oz (170 g)
For the filling
Lactose-free ricotta 2 cups (500 g)
Apricot jam 0.8 cup (200 g)
Lactose-free Spreadable Fresh cheese 1 ½ cup (320 g)
Powdered sugar 3.5 oz (100 g)
Gelatin in sheets 0.7 oz (20 g)

Apricot jam 0.8 cup (200 g)

How to prepare Lactose-free apricot cheesecake

To prepare the lactose-free apricot cheesecake, place the plain dry cookies in a food processor 1 and blend them finely 2. Transfer the crushed cookies to a bowl and add the coconut oil 3.

Mix to combine 4. Pour the mixture into a springform pan lined with parchment paper (9-inch) 5, pressing it firmly into the base with a meat mallet or the back of a spoon 6. Chill in the refrigerator for 30 minutes.
