Apple cake with almond flour

PRESENTATION

Apple Cake with Almond Flour gets its character from a double almond build: almond flour in the batter and almond milk as the liquid work together to produce a crumb that is soft, fragrant, and faintly aromatic—qualities a standard apple cake rarely delivers. Thin apple slices are layered alternately with the batter rather than folded in all at once, so the fruit distributes through every slice instead of sinking to one dense layer at the bottom.

Sliced almonds scattered across the surface toast naturally during baking, adding a quiet crunch to each bite and keeping the texture from reading as uniformly soft throughout. Serve it with coffee or tea at breakfast or midafternoon—it tastes more considered than its method would suggest, and it holds well enough to slice cleanly the next day.

Preparation

How to prepare Apple cake with almond flour

To prepare the apple cake with almond flour, first melt the butter in a small saucepan and let it cool slightly. Meanwhile, pour into a large bowl the eggs together with the sugar 1, the seeds from the vanilla bean 2 and a pinch of salt 3.

Whisk well, then add the warm melted butter 4 and mix again. Sift the flour and baking powder into the bowl 5, incorporating the dry ingredients with the whisk 6.

Finally alternate the almond milk 7 and the almond flour 8, stirring until you obtain a homogeneous batter 9.

Now peel the apples and slice them thinly 10. Grease and flour a 7-inch (18 cm) springform pan and spread a little batter on the bottom 11, then add some of the apples 12.

Continue alternating the batter 13 with the fruit until all the ingredients are used up. Finish with a final layer of apples 14 and finally sprinkle the surface with sliced almonds 15.

Bake in a preheated conventional oven at 338°F (170°C) for about 60 minutes 16. When it is nicely golden, remove it from the oven and let it cool completely in the pan 17 before unmolding it. Your apple cake with almond flour is ready to be enjoyed 18!

Storage

The apple cake with almond flour can be stored at room temperature, covered with a cake dome, for a maximum of 2-3 days.

It can be frozen.
