To prepare the apple cake without butter, first peel 1.1 lbs of apples for the batter 1, remove the core. You will have 0.8 lbs of pulp to cut into pieces 2. Transfer to a bowl and drizzle with lemon juice to prevent the apple from browning 3.
Sift the flour into a bowl, then add the ground cinnamon 4, ground ginger 5, and ground nutmeg 6.
Add the sugar and salt 7, then mix the dry ingredients with a whisk 8. Pour in the seed oil 9.
Gradually add the plant-based milk 10 while you start mixing with the whisk. Sift in the baking powder 11 and blend it well into the batter 12.
Lastly, add the diced apples (drained from the lemon juice) 13, incorporating them into the mixture with a spatula 14. Pour the batter into a greased and floured 9-inch diameter cake pan 15.
