Venetian-style liver is a simple, bold meat main course, marked by the presence of onions as co-stars of the dish. It is a great classic of Venetian tradition and plays on the meeting of the flavor of liver and the sweetness of white onions. Today it is often made with calf’s liver, which is more delicate than the pork liver originally used. Served piping hot, it fits nicely at the center of an autumn menu.
