Canned tomatoes 3.3 cups (800 g)
Vegetable broth 3 cups (700 g)
Extra virgin olive oil to taste

Preparation

How to prepare Tomato Risotto with Broccoli and Mushrooms

To prepare the tomato risotto with broccoli and mushrooms, start with the broccoli florets. If they are too large, cut them in half and remove the toughest parts 1. Drop the florets into salted boiling water 2 and cook them until they are done but still firm 3.

Drain them and immediately transfer them to a bowl of ice water 4 to stop the cooking and preserve their color. Once cooled, drain thoroughly and dress with a drizzle of oil 5. If necessary, adjust the salt, toss 6 and set aside.
