Sweet soft swirl rolls are a breakfast favorite in France. They take inspiration from the classic pan brioche, but you know what? They make things way, way simpler. Really good stuff. These cinnamon rolls use a neat trick—melted butter right into the mix from the start. So, no fussing with dough till it’s all stretchy and perfect. Pretty simple, right? Even if you're new to baking, you can make tender, moist rolls just as good as a bakery’s.
The focus here? A soft, sweet bite every time. And these homemade cinnamon rolls are perfect for anyone who loves a cozy morning with something fresh. Plus, you can add cream, chocolate chips, or even Nutella. Seriously good. Not your average soft cinnamon rolls, for sure! Imagine waking up to the smell wafting through your kitchen. Pretty much unbeatable.
There's nothing like a warm tray of sweet rolls that practically melt in your mouth. The thing is, because this recipe skips fancy gear and sticks to simple steps, it makes baking from scratch way less intimidating. And look, you still get everything people love about fluffy cinnamon rolls—the golden outside, the soft center, and that bit of sweet swirl that makes you want another bite. It’s the kind of food that pulls everyone to the table in the morning, grabbing their favorite roll. And the one with the most filling? Everyone wants it.
French home bakers sometimes fill them with pastry cream for extra creamy texture, or just keep it simple with the basic swirl. So, whether you keep it plain or load it up with extras, this easy cinnamon roll recipe gives you that classic taste with almost no stress. Once you try these, it’s hard to go back to store-bought cinnamon buns. For real, they don’t have the same soft, tender feel or fresh-baked smell. Can’t go wrong with homemade.

To prepare the soft sweet rolls, first melt the butter and let it cool. Ensure that all other ingredients are at room temperature and start making the dough. In a bowl, pour the milk, water, and melted butter 1. Stir briefly, then add the egg 2 and the egg yolk 3.
Mix with a whisk 4 and also add the sugar 5 and crumbled yeast 6.
Also add part of the flour 7 and mix with a whisk or spatula 8. Continue like this, adding the flour little by little 9.
Finally, add a pinch of salt 10. When the dough has formed, start kneading by hand 11, first in the bowl and then on the work surface 12, until it is smooth and homogeneous. This will take about 5 minutes.
Form a ball 13, place it in a bowl, and cover with plastic wrap 14 or a plate. Let it rise for two and a half hours until it has doubled in volume 15.
At this point, sprinkle the work surface with flour and transfer the dough onto it. Flatten it first with your hands and then roll it out with a rolling pin 16, until you get a rectangle about half a centimeter thick 17. Brush the entire surface with melted butter 18.
Now, using a pastry cutter and a ruler, cut strips about 2 cm wide 19. Roll each strip 20 to form a roll 21.
Transfer the rolls one by one onto a baking tray lined with parchment paper 22, cover with another tray and let rise for another 45 minutes. After this time, brush the surface with beaten egg yolk and cream 23 34.
Bake in a preheated static oven at 350°F for about 25 minutes. When they are nicely golden, remove your soft sweet rolls from the oven 25, let them cool slightly, and dust with powdered sugar 26 before serving them 27.
