In a saucepan, place the oil and onion, and let it soften 1; in the meantime, cut the seitan into cubes 2 and when the onion has softened, add the celery and carrot, and let them braise as well 3.
Add the seitan to the saucepan with the vegetables and then deglaze with white wine 4; finally, add a tablespoon of soy sauce 5, then season with salt if necessary and add the chopped parsley 6.
