How to prepare Savory Puff Pastry Hearts

To prepare the puff pastry hearts, start by preheating the oven to 392°F, unroll the pastry and with a heart-shaped cutter, cut out 34 hearts, leave 8 whole while the remaining 16 should be cut with a smaller heart cutter (1-2). Overlay two cut-out hearts on each whole heart, making sure to brush each layer's surface to make the edges stick well 3. Brush well also the last layer of pastry and bake the hearts for about 10 minutes. Remove the puff pastry hearts from the oven and let everything cool on a rack. It's time to garnish your little hearts: here are our suggestions (the indicated doses for each filling are enough for 4 little hearts).

For the olive filling, start by cutting 4 olives into small pieces 4, then mix them with Philadelphia cheese and a teaspoon of cream (or milk) to make it creamy 5. Fill the little hearts with the cheese cream obtained 6 and garnish with the remaining whole olives.

For the shrimp filling, start by sautéing the shrimp with a knob of butter, deglaze with the brandy 7, add the tomato sauce 8 and thyme, and cook. Set aside 4 whole shrimp that you will use for garnish, mix the robiola cheese and blend in a mixer 9 to obtain a smooth cream. Fill the little hearts with the cream and garnish with the whole shrimp. Enjoy your meal!

Advice

I love quick recipes that allow for preparation in advance: you can do things calmly, enjoying all the stages of preparation. Surprise twist: the puff pastry hearts are among these. If you want to get ahead, you can store them raw in the freezer: stack them in a box, separated by sheets of wax paper, so they won't stick together. When the time comes, just brush them with beaten egg and bake them.

What to do with the leftover pastry scraps? Snacks! Brush them with beaten egg and decorate with poppy seeds, sesame seeds, oregano, or pink salt. You can bake them together with the vol-au-vents to enrich your Valentine's Day menu to make at home.
