Pears with Amaretto

PRESENTATION

In Northern Italy, you'll often find folks wrapping up a nice dinner with something like poached pears with amaretto. And here's why: it really stands out. Those tender baked pears soak up so much flavor when mixed with crushed amaretti cookies, honey and that classic almond liqueur. The amaretto pear dessert is special because those amaretti cookies add a bit of crispiness to the soft fruit, and the honey and liqueur give each bite a warm, sweet kick.

People in Piedmont and Lombardy, they love the combo of those agrodolce, or sweet-and-bitter, flavors. The thing is, the touch of pears in amaretto sauce isn't just about sweetness; there's that hint of nuttiness and a little edge of bitterness from the cookies and liqueur—pretty much keeps things interesting. It's like a dish that's fancy, but still, you know, totally comforting at the end of a meal.

And the sauce? A lot of people rave about it. After baking, those pear juices swirl with a splash of brandy and a little sugar, and you get this rich, almost caramel-like sauce. You pour it on top while everything's still warm. Seriously good. The fruitiness from the pears mixes with the almond notes from the amaretto—making every bite of this amaretto poached pears recipe feel like something you'd find in a cozy Italian trattoria.

For anyone into that amaretto-infused pears vibe, this dessert just works—moist fruit, a golden sauce, and that cookie crunch. Whether it's a simple weeknight treat or to impress folks at a special dinner, this Italian pear dessert feels a bit more elegant than your average baked fruit. Some like adding a scoop of vanilla gelato or whipped cream on the side, but I gotta say, the sauce alone feels like a celebration. It really brings out the best in pears and amaretto liqueur, and when you want to share something special that balances sweet, nutty, and a bit of bite, you just can't go wrong. It’s always a good pick.

How to prepare Pears with Amaretto

To prepare the pears with amaretto, set aside 4 whole amaretti and crush the remaining ones with a meat tenderizer 1, reducing them to fine crumbs. You can also do this with a mixer; then place them in a bowl 2 and add the amaretto liqueur 3,

the cream 4 and the honey 5, stir with a spoon until the ingredients are combined 6.

Meanwhile, wash the pears and remove their tops 7, and with the appropriate tool, remove the core 8, further enlarging the central cavity and place them in a baking dish, where they can stand upright and close together; then, with the help of a teaspoon, fill the pears with the amaretto mixture 9.

pour half an inch of water into the dish 10 and distribute the butter over the bottom 11. Place the pears in a preheated static oven at 350°F, and bake them for about 1 hour (or in a fan oven at 320°F for 50 minutes) 12.

Once cooked, remove the pears with amaretto from the oven and place them on a serving plate, keeping the cooking juices aside 13. Now prepare the sauce to accompany the pears: put the pears' cooking juices in a small pot over the heat and reduce it slightly over low heat, adding the brandy 14 and the sugar 15,

cook until the liquid has thickened and the sugar begins to caramelize 16. At this point, turn off the heat, place one whole amaretto on each pear 17, and pour the caramel over the warm pears with amaretto, enjoy your delicious pears with amaretto immediately 18!

Storage

You can store the pears with amaretto in the fridge for up to one day, freezing is not recommended.

Advice

Very small amaretti are available on the market, which you can use as a stopper after filling the pears with the stuffing; placing one under each pear will make it less likely that their contents will leak out during cooking and dissolve in the cooking water!

Instead of Kayser pears, you can use the Decana variety!

Curiosity

Amaretti are used as an ingredient for the filling of other types of baked fruit; with the same pear recipe, you can also prepare apples and peaches with amaretto. Of course, peaches will need to be halved and pitted, further hollowed, filled with the stuffing, and arranged in a baking dish; if desired, you could also add chocolate shavings to the filling or on top!
