To prepare spelt muffins with strawberries and almonds, in a bowl mix the spelt flour and raw cane sugar with the help of a whisk 1. Then add the baking powder 2 and yogurt 3,
next break the eggs and add them 4, then mix with the whisk 5. Finally, pour in the extra virgin olive oil slowly 6 and blend the ingredients well.
Continue to mix with a spatula until you get a smooth and soft mixture 7. Wash the strawberries, trim them, and cut them into pieces (8-9).
Add the strawberries to the muffin batter 10, give it a stir 11, and lastly add the sliced almonds 12. Remember to set aside a handful of both strawberries and almonds for the final decoration.
In a muffin tin, place the liners and fill them to 3/4 of their height with the batter 13; add a couple of strawberry pieces and almond slices on top of each muffin 14 and bake the spelt muffins in a preheated oven at 356°F for 20-25 minutes (if using a fan oven, 320°F for 15-20 minutes). Take the spelt muffins with strawberries and almonds out of the oven 15, let them cool on a wire rack, and serve them!
