Involtini alla pizzaiola

PRESENTATION

Involtini alla pizzaiola is one of those classic dishes from the Campania region in southern Italy that just screams comfort. Picture this: thin slices of beef rolled up with melty mozzarella and juicy black olives. Honestly, it's all simmered in a rich tomato sauce bursting with Mediterranean herbs.

And here's the thing, this dish gives you that bold flavor typical of a beef involtini recipe, without weighing you down. Really comforting. In Campania, these tender roll-ups are often paired with mashed potatoes or rice, making it a satisfying full meal.

It's perfect for family gatherings when you want something special yet super easy to prepare. Different regions in Italy have their own takes on meat roll-ups. In Sicily, they might throw in pine nuts, while up north, they love their prosciutto. But in Campania, the pizzaiola style is all about mixing tomato, cheese, and herbs.

The sauce gets super savory and keeps the beef moist. Each bite? Comforting for sure. You can switch things up—add capers or even swap in vegetables for a vegetarian spin. These Italian beef roll-ups are a fun alternative to meatballs or beef braciole if you're looking to change things up. The mozzarella melts into the sauce. Seriously good.

Plus, the olives? They add a briny kick. If you love beef roll-ups with tomato sauce or want something homey but not too complicated, this dish is a must-try. And you know what? It tastes even better the next day, so leftovers are a real treat.

Whether you're a fan of traditional Italian cuisine or just looking for new comfort food, Involtini alla pizzaiola is definitely worth adding to your recipe collection. It's easy, delicious, and offers a taste of southern Italy right at your table. Really, you can't go wrong.

How to prepare Involtini alla pizzaiola

To prepare the pizzaiola-style rolls, start by placing the crushed garlic clove in a large pan with the oil. Brown the garlic and then add the tomato sauce 1, season with salt and pepper and bring to a simmer. Finally, add the oregano and parsley. While the sauce is cooking, lightly pound the slices of meat with a meat mallet, and even them out if they are very irregular. Cut the mozzarella (or scamorza) into thin slices 2 and let it drain on a sieve to remove as much water as possible. Finely chop the black olives 3.

On each slice of meat, place 2/3 well-drained slices of mozzarella 4, distribute the chopped olives 5, and roll the meat from the short side like a roll 6,

which you will secure with two toothpicks 7. Place the prepared rolls in the sauce 8, salt them on both sides, cover with a lid, and cook over a very low heat (the sauce should just simmer) for about 20 minutes. At the end of cooking 9, adjust the salt. If the mozzarella has released water during cooking, remove the rolls from the pan, keep them warm, and slightly reduce the sauce! Serve the rolls hot with some mashed potatoes or boiled rice!

Storage

Store the pizzaiola-style rolls in the refrigerator, in an airtight container, for a couple of days at most.

Tip

For a more "grown-up" version, you can replace the mozzarella with scamorza and the olives with herbs: anything but diet-friendly, as you end up eating a ton of bread with it, but delicious.
