Gluten-free ladyfingers 7 oz (200 g)
Cow's milk ricotta cheese 1 ¼ cup (300 g)
Gluten free dark chocolate 70% 1.8 oz (50 g)
Pistachios 0.75 oz (20 g) - (shelled)
Peeled almonds 2 tbsp (20 g)

How to prepare Gluten-free ricotta and chocolate truffles

To make the gluten-free truffles with ricotta and chocolate, first finely chop the dark chocolate with a knife 1. In a food processor, add the pistachios 2 and almonds 3.

Turn on the processor and blend until you get a flour-like consistency 4. Transfer the nut mix into a baking dish. Crumble the ladyfingers in a bowl 5. Add well-drained ricotta 6.

Also incorporate the chocolate 7 and mix everything with your hands until you obtain a homogeneous and compact mixture 8. Form balls of about 20 grams each 9, with these quantities, you'll get about 18 truffles.
