PRESENTATION

Fruit puff pastry is a showstopper on any dessert table. Crispy, flaky layers—so so tasty—and a burst of color from fresh fruit make it irresistible. In Italy, this dessert is called sfogliata alla frutta, and I gotta say, it’s a real hit at special events. People just love how it combines a light, fruit puff pastry crust with a thick, creamy crema pasticcera—sorta like a cross between a tart and a millefoglie.

Here's the thing, what makes it so easy is using ready-made puff pastry—"pasta sfoglia" locally—so you get that tender bite without the hassle. During summer, you'll find it topped with peaches, grapes, or apricots. And listen, in winter, folks switch to mandarins, kiwis, or even pomegranate seeds for a tangy punch. Seriously, the look is almost as important as the taste—super colorful.

Now, across Italy, you’ll notice some variations in how this easy fruit dessert is made. Some swap in berries or a different custard style, but the base idea stays. Basically, the combo of golden puff pastry, rich custard, and juicy fruit fits any occasion. Whether it’s a quick treat or something festive, it just works. What’s really really awesome is how this fruit tart recipe aligns with the Italian habit of using whatever is freshest—no two pastries look the same.

It’s perfect for birthdays, holidays, or just when you want something fresh with your coffee. The classic version keeps it simple, but you can add your twist with a drizzle of honey or a sprinkle of powdered sugar for a moist finish. And look, no matter what, a homemade easy fruit dessert like this really gives you both looks and taste. It’s a real go-to for anyone who loves a fresh fruit pastry that’s light, colorful, and totally satisfying. Pretty much a winner.

How to prepare Fruit Puff Pastry Tart

To prepare the puff pastry tart, take a sheet of puff pastry, unroll it carefully and place it directly on a baking sheet or on the oven tray 1, taking care to fold the edges inward 23 to create a nice rim.

At this point take a fork and prick the entire base to prevent it from puffing up too much during baking 4. Brush the entire pricked surface with the egg white 5 and sprinkle it with granulated sugar 6.

For the border, use the yolk to obtain a perfect golden color 7. Bake the pastry alone in a preheated conventional oven at 392°F and let it bake for about 10 minutes until it is slightly golden. In the meantime, prepare the pastry cream. In a small saucepan pour the egg yolks 8 together with the sugar 9.

Whisk 10, then incorporate the cornstarch 11 and finally pour in the milk in a thin stream 12.

Transfer everything to the heat 13 and cook over low heat, continuing to stir constantly to prevent unwanted lumps. Once ready 14, let cool, then transfer the cream to a serving dish, cover it with cling film and place it in the fridge to set 15.

Now clean the fruit and slice the kiwis 16, the banana 17 and the strawberries 18.

Retrieve the baked and cooled tart 19, transfer the cream into a piping bag without a tip and distribute it evenly over the pastry 2021.

Level it with a spatula 22 and then decorate with fruit as you like: make a first border of kiwis cut into half-moons 23, then arrange a ring of blueberries 34.

Continue with the strawberries 25, lay the bananas on top 26 and finish with two rows of raspberries. Your fruit puff pastry tart is ready — enjoy it immediately 27.

Storage

The puff pastry tart keeps in the fridge for one day.

We do not recommend freezing it.

Tip

You can brush a very thin layer of warm apricot jam or glaze over the fruit just before serving the dessert, to preserve the bright colors of the kiwis and strawberries and to prevent the banana from browning when exposed to air.
