Chocolate spoon cookies are drop cookies in the most literal sense: the dough goes straight from the bowl to the baking tray with two spoons, no rolling pin, no cookie cutters, and no chilling required. The name comes directly from the technique — al cucchiaio means by the spoon — and that's what separates these from pasta frolla, the rolled-and-cut shortbread dough that most Italian biscuits rely on. They work equally well as a breakfast cookie or an afternoon snack, and the whole process takes only a few minutes from start to finish.
The chocolate comes in twice: chips folded into the dough, and chocolate cubes pressed onto each cookie just before baking. Both layers land in every bite, so the surface isn't just decoration — it's a second, distinct hit of chocolate on top of what's already in the dough. Because portioning is the only real technique involved, there's nothing to overthink and no special equipment to dig out.

Place a chocolate cube on the center of each cookie 13, pressing lightly to make it adhere to the dough 14. Bake in a preheated conventional oven at 356°F on the middle rack for about 20–25 minutes, until well golden 15. Remove the cookies from the oven and let them cool completely before serving.
