Basmati rice with soy tofu and sautéed vegetables is, honestly, a really tasty Asian-inspired dish. Seriously good stuff. It shows how much you can do with just a few basic ingredients. People love this basmati rice recipe because it stays so fluffy and tender, thanks to the natural low glycemic index of the rice. And the tofu? It adds a moist bite, especially after soaking in that salty, rich soy sauce marinade. Really, really tasty. The tofu soaks up the flavor, turning this into a plant-based meal that’s just as satisfying as any meat dish. Quick stir-frying of the veggies—super colorful, by the way—keeps them crispy and fresh, ideal for anyone who loves their food packed with goodness. It’s filling without feeling heavy. Which is great.

How to prepare Basmati rice with soy-marinated tofu and stir-fried vegetables
To prepare basmati rice with soy-marinated tofu and stir-fried vegetables, first put the rice into plenty of salted water 1 and cook for the time indicated on the package. Meanwhile, take care of the other ingredients: cut the tofu into cubes, then pour the maple syrup into a bowl 3.
Add the soy sauce 4, the sriracha sauce 5 and the peanut butter 6.
Mix the mixture well 7, then add the tofu cubes 8 and mix with your hands to coat them evenly 9. Let marinate while you continue with the rest of the recipe.
Peel and trim the carrots, halve them lengthwise and cut them into diamond-shaped slices about 1/8–5/32 inch thick (approximately 3–4 mm) 10. Do the same with the zucchinis 11. Finally, slice the spring onion 12.
In a nonstick pan heat a drizzle of oil, then add the vegetables 13 and stir-fry over high heat for a few minutes, seasoning lightly 14. When they are browned but still crisp, set them aside 15.
Meanwhile the rice will be cooked, so drain it into a bowl and dress it with a drizzle of oil 16. Remove the tofu from the marinade and put it in the same pan where you cooked the vegetables 17, then sauté it for a couple of minutes over high heat until well browned. At this point pour in the marinade liquid as well 18 and a splash of water, mix well and turn off the heat.
You're ready to plate: arrange the rice as a base, then add the tofu with its sauce 19 and the vegetables 20. Finish with black and white sesame seeds and chopped chives. Your basmati rice with soy-marinated tofu and stir-fried vegetables is ready to be enjoyed 21!
