PRESENTATION

Sweet almond panini are these soft, bite-sized milk rolls that instantly make any table feel a little more special. Really good stuff. They come from a tradition of Italian home baking—where hands-on fun and sharing fresh treats is just part of the day. And what makes these different is their fluffy, moist crumb. So so tender. Made even better by a delicate almond milk syrup that soaks right in and gives off a light, nutty aroma. Seriously good. It’s a kind of sweet panini recipe that’s not overly sugary, so you get just enough sweetness without it being too much. People often put these out at buffets or family gatherings because everyone from kids to grown-ups enjoys them, especially paired with a hot cup of coffee or, for the younger crowd, a glass of milk. And the Italian touch? It is in the texture—super tender and just the right amount of chewiness. They invite you to get involved, maybe even rolling the dough together for a festive vibe.

Plus, these little buns really shine when you add homemade jams. Folks in Italy go for everything from classic strawberry or apricot to more playful flavors like pear and ginger, or even pineapple if you want a tropical twist. And look, the almond milk syrup is what brings it all together—making each bite a bit soft and sweet without being heavy. It’s easy to see why these almond dessert panini show up at so many celebrations; they fit right in with all sorts of sweet sandwich ideas, and you can even slice them open and add a little almond spread or butter for extra richness. Unlike heavier dessert panini recipes, these rolls keep things light and airy. That makes them a real surprise for guests who might expect something richer but end up loving the light, golden finish instead. Sharing these at a party or family meal just feels good—there’s something about the mix of tender bread and that hint of almond that makes people smile. I mean, in the end, a tray of sweet almond panini brings a bit of Italian warmth to any get-together, keeping things cheerful and delicious without a lot of fuss.

Preparation

How to prepare Almond sweet buns

To prepare the almond sweet buns, start with the dough. Place a sieve over a bowl and sift the two flours 1. Then, in another bowl, pour the milk at room temperature 2 and then the yeast 3.

Stir with a spoon until the yeast has completely dissolved 4. Then in the bowl with the flours add the sugar 5 and the milk gradually while kneading with your hands 6.

Pour in the almond syrup 7 and the melted and cooled butter 8. As soon as the dough is almost ready, incorporate the salt 9.

Transfer the dough to the work surface and knead for a few minutes or until you have obtained a smooth ball 10. Transfer to a bowl, cover with plastic wrap 11 and let it rise for about 3 hours at a temperature of about 79°F or until doubled 12.

Divide the dough in two and shape into two loaves, it will be easier to work with them 13. Using a bench scraper, cut about 15 pieces of 1 oz each from each loaf. You should get a total of 28-30 little buns 14. Slightly flatten the individual pieces 15

and finally round them with the palm of your hand: you should obtain a perfectly closed sphere 16. Place the balls on a baking sheet lined with parchment paper as you go, leaving space between them, and cover with a cloth to let them rise for about half an hour 17. Meanwhile, preheat the oven and chop the almonds with a knife 18.

Take the buns, brush them with a little milk 19 and sprinkle them with the chopped almonds 20 and sugar sprinkles 21.

Your buns are ready to be baked 22, in the oven at 392°F for about 18 minutes or until golden 23. Your almond sweet buns are ready, let them cool completely… if you can resist tasting them first 34!

Storage

The almond sweet buns can be stored at room temperature, in a bag, for about 3-4 days. Once baked, they can be frozen, as long as they are well cooled.

Tip

To make your almond buns even more delicious, you can add a mix of dried fruits like pine nuts, hazelnuts, and walnuts on top or in the dough.
