Zucchini 1.8 cups (220 g)
Carrots 1.3 cups (170 g)
Potatoes 0.8 lb (350 g)
Leeks 1 ½ cup (130 g)
Spinach 2 cups (60 g)

How to prepare Vegetable Cutlets

To prepare the vegetable cutlets, peel 1 and cut the potatoes into 1 cm (about 3/8 in) cubes 2. Trim the zucchini and cut them into dice the same size as the potatoes 3.

Do the same with the carrots 4. Then slice the leek into rounds 5 and sauté it in the pan with the oil 6.

Season with salt 7 and cook for about three minutes, or until softened. Add the potatoes 8 and the carrots 9.

Add the zucchini as well 10, stir well, then cover with the lid to retain moisture 11 and cook the vegetables, without adding water, over medium-high heat for 15 minutes, stirring occasionally 12.

The amount of cooked vegetables is about 650–680 g (about 1.4–1.5 lb or 23–34 oz). You can cover this quantity with any type of already-cooked vegetable — of course take care to adjust the consistency of the mixture with more or less breadcrumbs as needed, for example if you use fewer potatoes or omit them entirely. This means you can make these tasty cutlets with leftover vegetables cooked in a pan or in the oven.
