PRESENTATION
Sweet tagliatelle from Emilia Romagna bring a burst of fun to any table, especially during the lively days of Carnevale. Honestly, in this bright Italian region, folks roll out soft egg pasta dough—just like for savory tagliatelle—but here’s the twist: the dough gets sprinkled with sweet sugar and fresh grated orange zest before being cut into small rounds. This Carnevale dessert smells a bit zesty and goes super crispy on the outside after a quick fry in plenty of seed oil. Once dusted with powdered sugar, these sweet tagliatelle are the kind of treat that makes both kids and adults smile, no question. The golden pieces pile up on plates, ready for a celebration, calling everyone over to grab a bite together.
During Carnival in Emilia Romagna, these Italian carnival sweets are pretty much a staple at family gatherings, school parties, and those big dessert buffets where people bring all sorts of traditional Italian desserts. I mean, what makes tagliatelle dolci different, especially compared to the similar ‘arancini di Carnevale’ from Marche, is the eggy, moist dough and that simple yet tangy orange flavor in every bite. Parents and kids usually team up to make them, rolling and cutting the dough into little circles, turning the process into a fun, flour-dusted mess—perfect for the playful mood of Carnevale. These fried tagliatelle disappear quickly, as everyone goes back for more of that crispy and sweet pasta.
Whether served on their own or mixed with other festive Italian recipes, tagliatelle dolci evoke memories of good times, laughter and a table full of friends and family. It’s this blend of simplicity, fun and tradition that makes this dessert such a classic during Carnival. So, if you’re looking to bring a touch of Italian festivity to your home, these sweet tagliatelle are a delicious way to do it, packed with that unmistakable taste of tradition. Really, you can't go wrong.

How to prepare Sweet Tagliatelle for Carnival
To prepare sweet Carnival tagliatelle, sieve the flour 1 in a bowl, add the eggs 2, a pinch of salt and mix the ingredients 3.
When the mixture becomes more compact 4, transfer it to a work surface and knead briefly 5 to obtain a smooth and homogeneous dough: create a ball and wrap it in plastic wrap 6 to let it rest in the refrigerator for at least 30 minutes.
After the necessary time, roll out a sheet about 1-2 mm thick 7 with a rolling pin (you can also use a pasta machine). Sprinkle the obtained disc with powdered sugar 8 leaving about 0.4 inches from the edge and grate the zest of an orange over it 9.
At this point, roll the dough (10-11) and let it rest in the fridge for another 30 minutes. Then make the tagliatelle by cutting the roll into slices about 0.4 inches thick 12.
Fry the sweet tagliatelle in plenty of seed oil (a few at a time so as not to lower the oil temperature too much, which must be constant and not exceed 340°F) 13. Then drain them 14 and place them on a tray lined with absorbent paper 15. You can sprinkle them with powdered sugar.
