Spaghetti with Mussels in a Lemony White Sauce skips the tomato entirely — and that single omission is the whole point. Where most mussel pasta leans on cherry tomatoes or passata for body and color, this version turns entirely to the mussels themselves. The liquid they release during cooking is filtered and reduced into a concentrated, savory base that coats each strand the way a long-simmered sauce would, without cream or stock anywhere near the pan.
That reduction is what makes it work. Mussel liquor left unfiltered carries grit; left unreduced, it's too thin to cling. Filtered and cooked down, it becomes a broth with enough body to feel genuinely creamy — a texture built through process rather than shortcuts. The result tastes cleaner and more directly of the sea than tomato versions do, which is exactly why cooking in bianco exists.

To prepare spaghetti with mussels in white, start by making sure the mussels are well cleaned; otherwise clean them following How to Clean and Open Mussels. Discard any that are open or have a broken shell, then rinse them well under running water. In a large skillet pour a generous drizzle of extra virgin olive oil, add a clove of garlic peeled and halved and a fresh chili pepper split in two 1. Let the oil infuse for a few moments over low heat, taking care not to burn the garlic. Then add the mussels 2, increase the heat and deglaze with dry white wine 3, allowing the alcohol to evaporate.
Cover with a lid 4 and continue cooking for a few minutes, just long enough for all the mussels to open. Meanwhile, put a pot of water on the heat for the pasta. Once opened, using a slotted spoon remove only the mussels (not the cooking liquid) 5 and transfer them to a bowl 6.
Shell them and set aside 7. Strain the cooking liquid through a fine-mesh sieve 8 to remove any impurities and transfer it to a large saucepan 9. Turn on the heat and let it reduce over low heat.
As soon as the water reaches a boil, cook the spaghetti 10. When about 5 minutes remain on the package cooking time, drain the spaghetti directly into the pan with the mussel reduction. Continue cooking, finishing the pasta like a risotto 11, adding a little pasta cooking water if necessary, until the spaghetti are al dente and well coated with the sauce. At this point add the shelled mussels 12 and mix gently.
Add a drizzle of extra virgin olive oil off the heat 13 and toss the pasta with the heat off, seasoning with a grind of black pepper. Plate the pasta and place some mussels on top 15.
Add a little of the sauce as well 16 and finish with the grated zest of an unwaxed lemon. Serve the spaghetti with mussels in white immediately, hot and creamy, completing the plates with the mussels set aside 18.
