INGREDIENTS
Chicken breast 1.3 lbs (600 g) - (2 x 300 g each, already trimmed)
Cherry tomatoes 2.7 cups (400 g)
Lamb's lettuce 5 cups (150 g)
Garlic 1 clove
White wine 3.5 oz (100 ml)
Thyme to taste
Rosemary to taste
Extra virgin olive oil 2 tbsp (30 g)
Fine salt to taste
Black pepper to taste

How to prepare Sliced chicken breast

To prepare the sliced chicken, wash the cherry tomatoes, pat them dry and cut them into quarters 1. Place them in a bowl and season with salt, pepper, oil and thyme. Mix well and set aside while you prepare the chicken so they have time to absorb the flavors. Meanwhile, pour a drizzle of oil into a large skillet, add a crushed garlic clove and the rosemary 2. Cook over low heat for about 3–4 minutes. When the oil is hot and fragrant, remove the garlic and rosemary. Lay the whole chicken breasts in the pan 3.

Store the sliced chicken breast in the refrigerator in an airtight container and consume within 2 days. To best preserve texture and freshness, if possible store the chicken separately from the side. Freezing is not recommended.

Tip

Pay particular attention to the searing step: use a pan that is already well heated and do not move the chicken continuously. Letting it cook undisturbed for a few minutes on each side will give a more even browning.
