PRESENTATION

Fish skewers are this super popular dish along Italy’s stunning coast. They really, really show off how great grilled fish skewers can be with their tender bite and splash of color. In places like Liguria and Sicily, locals pretty much just grab whatever's freshest from the sea—swordfish, salmon, shrimp, even cuttlefish—threading them onto skewers with zucchini slices and bright bell peppers. And the colors? Awesome. There’s just something about mixing seafood and veggies that works great, especially with a sprinkle of chopped herbs like parsley or oregano. The moist seafood, with those crispy grill edges, makes each bite taste like a summer by the sea. Really, the smell alone of herbs and skewers cooking is enough to get everyone's stomachs rumbling.

These seafood kabobs are perfect. Seriously, they’re great for a chill family dinner or a bigger hangout with friends. Plus, they’re so easy to change up. Swap the fish or add more veggies and voilà—you’ve got your own version. Some folks love a quick marinade—maybe a lemon-garlic mix or just some olive oil, salt, and pepper—to amp up the flavor, turning them into marinated fish skewers. Truthfully, they’re simple to throw together and always come off the grill looking so golden and inviting. These fish skewers are a favorite for those who love fresh, tangy food that does not eat up your whole day. Whether you're sticking to old family traditions or just tossing things together for a quick weeknight meal, Mediterranean seafood skewers like these bring that chill Italian vibe right to your table.

Look, the whole dish really proves that good ingredients and a bit of heat can make something sweet and unforgettable, no matter where you are. Plus, it’s a fun way to bring a taste of Italy into your cooking, giving you a bit of that coastal charm right at your dining table. For sure, these skewers make for a memorable meal.

How to prepare Seafood Skewers

To prepare the seafood skewers, first remove the skin from the swordfish steak 1, then cut it into strips 2 and finally into cubes about 1 1/4 inches on each side 3.

Remove the skin from the salmon 4 and cut it into cubes of the same size 5. Slice the zucchini into rounds 6.

Remove the stalk, seeds, and inner filaments of the bell peppers, then cut them first into strips 7 and then into squares about 1 1/4 inches on each side 8 9. Peel the shrimp as well.

Assemble the skewers by alternating the ingredients, for example: start with a slice of zucchini, then swordfish, red pepper, salmon, more zucchini, shrimp 10, yellow pepper, baby cuttlefish, red pepper, swordfish, and finally zucchini 11. Finely chop the dill, bay leaf, rosemary, sage, and thyme 12. With these doses, you'll get 8 skewers.

In a pan, pour a drizzle of oil and add the chopped aromatic herbs 13, let them flavor for a minute. Place the skewers in the pan and let them brown for about 1 minute on each side. Season with salt and pepper 14, then deglaze with white wine 15.

When all the alcohol has evaporated, cover with a lid and cook on low heat for 10-15 minutes 16. Plate and dress with the cooking juices 17. Your seafood skewers are ready to be enjoyed 18.

Storage

It is best to consume the seafood skewers as soon as they are ready, but if there are leftovers, you can store them in the refrigerator in a closed container for up to 1 day.

Advice

The seafood skewers can be easily customized according to your tastes and the available ingredients, for example, by adding thin slices of lemon or orange between the pieces of fish, you'll get citrus seafood skewers. Or you can marinate the fish in lemon or orange juice before assembling the skewers for an even more intense flavor.
