PRESENTATION

Rice and apple fritters are, honestly, such a tasty treat straight from the heart of Northern Italy. You know, where family traditions really really matter. In places like Lombardy and Trentino, these fritters mix the classic flavors of risolatte and apple goodness. Picture this: creamy rice simmered in milk, and apples sautéed with honey and cinnamon. Seriously tasty. It's like a snack your nonna might have lovingly prepared, which is great. And adding sugar on top? Gives it this light, crispy finish. Feels nostalgic.

This isn't just any apple fritters recipe; it's a comforting Italian one that brings warmth to your table every single time. Fresh out of the pan, these gluten-free apple fritters are perfectly golden and fluffy. And listen, when you roll them in granulated sugar while they're still warm, they get this sweet crunch everyone loves. The apples inside are so tender yet have a slight bite. Perfect with the creamy rice base. Honestly, it's way way better than typical American fritters. These Italian delights highlight simple ingredients.

Families in Northern Italy often whip these up during the fall apple season. Or, you know, on special Sundays when everyone's hanging out in the kitchen. The aroma of cinnamon and honey fills the air—really hard to resist sneaking a taste as they cool.

These homemade apple fritters show you don't need anything fancy. And just something that feels like home. Serve them warm, maybe with a sprinkle of extra sugar, and they’ll vanish. Super fast. If you're into rice flour desserts or looking for something different, these fritters combine the best of Italian sweets and cozy family moments. Pretty simple. For sure.

How to prepare Rice and Apple Fritters

To make the rice and apple fritters, first wash and cut the apples into cubes about 3/4 inch, without peeling them 1. Prepare the rice pudding: in a high-sided saucepan, add the milk, lemon zest 2, and sugar 3.

Add a pinch of salt 4 and pour in the rice 5, then add the apples 6.

Cook over medium heat for about 40 minutes, stirring often. When the rice pudding is almost cooked, remove the lemon zest 7. Cook to completion and transfer to a baking dish 8; when it has cooled slightly, cover with plastic wrap in contact with the surface and let it cool completely 9.

In the meantime, prepare the accompanying apples: wash and slice the apples into 1/8 - 1/6 inch slices, still unpeeled, then place them in a pan with honey 10 and cinnamon 11. Cook over low heat for about 15 minutes 12.

After the cooling time, beat the eggs in a bowl with an electric whisk 13. When they are fluffy, add one spoonful of rice pudding at a time 14 and continue to mix until you get a smooth batter 15.

You are ready to fry: drop the batter into hot oil at 340°F using 2 spoons 16. Fry 4-5 pieces at a time until golden brown, then drain 17 and transfer to paper towels 18.

When all the fritters are ready 19 roll them in granulated sugar to coat them evenly 20. Your rice and apple fritters are ready to be served hot alongside the honeyed apples 21!

Storage

It is recommended to consume the rice and apple fritters immediately.

Tip

If you prefer, you can serve the rice and apple fritters with some jam instead of the pan-cooked apples!
