PRESENTATION

Puff pastry apple bundles are a really fantastic treat you’ll find in bakeries all over Italy. And you know what? Wrapping apples in puff pastry isn't just an Italian thing—it's pretty common in European kitchens. These bundles are special, though, with their crispy layers keeping the inside so so soft and moist. The filling? It's sweet apples, sugar, cinnamon, and just a hint of apricot jam for a tangy kick. The jam not only adds flavor but helps everything inside melt together—beautifully giving it a nice shine once baked. And the smell? Oh, the cinnamon! It just fills your kitchen. Breaking one open reveals the tender fruit and flaky pastry that's really hard to resist.

These treats are perfect for a quick dessert or a snack with tea. No complicated steps, just really good stuff. In Italy, folks enjoy these apple puff pastry desserts as a midday treat or to finish a meal. Sometimes, you’ll see creative shapes, like apple pastry bundles braided with pastry cream or more jam—so flexible, right? They might remind you of an apple turnover, but the Italian version leans into the golden look and that flaky, almost buttery bite. Plus, the outside stays crisp while the center is all about that sweet, cinnamon-spiced apple goodness.

Honestly, they're great for sharing at gatherings or as a pick-me-up on a quiet afternoon. Pretty simple. And since they use ingredients you probably have on hand, this easy apple pastry recipe feels like a win every time. With their mix of crispy pastry and cozy filling, it’s no wonder these apple-filled puff pastries keep appearing on dessert tables across Italy and beyond. Whether you’re in the bustling streets of Rome or a quiet countryside café, these great bundles capture the essence of simple yet satisfying Italian pastry-making. I mean, who could resist? Not me, for sure.

How to prepare Puff Pastry Bundles with Apple Heart

To prepare the puff pastry bundles with apple heart, first peel the apple 1, remove the core 2, and cut it first into slices 3

and then into cubes about 0.4 inches on each side 4. In a small saucepan, pour the sugar, cinnamon 5, and lemon juice 6. Cook for a few minutes over low heat, allowing the sugar to dissolve well, stirring occasionally.

When it's dissolved, add the apple pulp cubes 7, pour in the apricot jam 8, and mix everything 9, allowing the apple to soften a bit over low heat for a few minutes; it shouldn't disintegrate completely.

With a pastry cutter, cut out 4 squares of puff pastry, each 6 inches on each side 10, brush the edges with a bit of the apple cooking liquid 11, and place a couple of teaspoons of apple mixture 12 on top, ensuring not to add too much cooking liquid, otherwise, when the bundles bake in the oven, the liquid will ooze out.

Fold the bundles in half, gently pressing the edges with your fingers 13, make diagonal cuts on the surface 14, and brush with the cooking liquid 15.

Using a fork, press down on the side edges of the bundles to seal them well 16, then bake them in a preheated static oven at 428°F for about 12 minutes (for a fan oven, you can bake at 392°F for about 8 minutes; in this case, to better adjust, you might bake just one bundle to find the right time and temperature). Once cooked, remove them from the oven 17, let them cool slightly, sprinkle with powdered sugar, and your puff pastry bundles with apple heart are ready to be enjoyed! 18.

Storage

You can store your puff pastry bundles with apple heart for up to 2 days under a glass dome.

We do not recommend freezing.

Tip

Instead of apricot jam, you can try, for example, using orange marmalade, and if you don't like the taste of cinnamon, you can simply omit it. To add a crunchy note to the filling of the bundles, try adding walnuts or pine nuts to the filling.

If you have round puff pastry, you can still make the bundles: in this case, cut out the squares as indicated in the recipe and with the leftover pastry, make small croissants, which you can fill with the same apricot jam used for the preparation of the bundles themselves.
