How to prepare Prickly Pear Jam

To prepare prickly pear jam, start by sanitizing the jars, following the Health Ministry's guidelines provided at the end of the recipe. Once this task is done, move on to the prickly pears: first, put on a pair of latex gloves. The simplest way to remove their thick skin is to cut off both ends and make incisions with a sharp knife along the length of the prickly pear, then, using the knife blade, pull the skin towards you 1. Cut the prickly pear pulp into very small cubes 2 and place them in a pot 3.

Put the pot on the stove, add the glass of water to the prickly pear pulp 4. Bring to a boil until the prickly pear cubes are mushy 5, then remove the pot from the heat and strain the pulp to remove the seeds 6.

Put the strained pulp back in the saucepan and turn the heat back on; in the meantime, squeeze a lemon 7. Storage
