Peach frangipane tartlets sit at a particular intersection of the refined and the everyday — a fragrant butter shortcrust cradling a layer of peach jam, then a soft frangipane cream, then a scattering of almonds that add a quiet crunch to every bite. Few genuine ingredients, no elaborate technique, and yet the result has a delicate balance of flavors and aromas that makes each small tart feel considered and complete.
They work equally well at breakfast, tucked into an afternoon snack, or brought out at the end of a meal. The butter shortcrust gives the base its characteristic tenderness, while the double filling — peach jam beneath the frangipane — keeps the sweetness layered rather than flat. The almonds on top are not decoration so much as a necessary contrast, keeping the texture honest. To prepare the peach jam tartlets, start with the pastry: place the cold butter cut into cubes 1, the brown sugar 2 and the salt 3 in the bowl of a stand mixer.
Add the grated lemon zest 4 as well and work with the paddle attachment until you obtain a creamy texture. Add the egg yolks 5 and mix again until they are fully incorporated, then add the all-purpose flour 6.

After the dough has chilled, roll it out on a lightly floured surface to a thickness of about 3/16 in (0.5 cm) 16. Cut 8 rounds using a 4 in (10 cm) round cutter 17, then press them into eight tartlet pans of the same size 18.
Work quickly to make the pastry adhere to the base and sides 19, then distribute a couple of teaspoons of peach jam 20 and cover with the frangipane cream 21.
Coarsely chop the almonds with a knife 22 and sprinkle them over the surface of the tartlets 23. Transfer the molds to a baking tray and bake in a preheated static oven at 356°F for about 35 minutes 34.
