Pasta with Bean Cream and Mushrooms

PRESENTATION

Pasta with bean cream is one of those dishes that really feels like home. You know, especially when the days start getting shorter and the air's a bit crisp. In Northern and Central Italy, people love pulling out all the stops with autumn goodies. And this creamy bean pasta—it's why that's such a good idea. The sauce? It comes together with smooth, pureed beans, adding this gentle sweetness. Meanwhile, sautéed mushrooms bring that classic, earthy vibe you get when they're in season. So, fettuccine? Works great. It clings to the sauce—making every bite extra moist and packed with flavor. Whether you’re a fan of mushroom pasta recipes or just like mixing it up, the combo of beans and mushrooms is pretty much unbeatable—there’s a lot going on with just a few ingredients. Plus, this is the kind of food people in Italy whip up when they want something filling, easy, and, to be honest, super comforting.

In towns across Tuscany and Emilia-Romagna, you’ll see lots of pasta with bean cream in the fall. And look, it’s not just because it’s quick. That tender texture from the beans, mixed with the golden edges you get when mushrooms are cooked just right, makes every forkful a little celebration of the season. People sometimes swap the beans based on what’s handy, but the goal is always that same velvety, warm feeling from a good homemade pasta sauce. This dish fits right in with plant-based pasta dishes and works for both a laid-back weeknight dinner or when you want something a bit special. No question, it’s hassle-free. When you’re in the mood for a healthy pasta recipe that doesn’t skimp on flavor, this is one of those plates that gets the job done. Whether you call it white bean pasta sauce or just a vegetarian pasta with mushrooms, it’s the kind of meal that makes everyone at the table feel a little cozier and, for real, a lot more satisfied. Seriously good.

How to prepare Pasta with Bean Cream and Mushrooms

To prepare pasta with bean cream and mushrooms, first thoroughly clean the mushrooms, removing any dirt with a damp cloth or a small knife 1. In a pan, pour a drizzle of oil, add a clove of garlic, and a few sprigs of thyme 2. Let it infuse for a moment, then add the mushrooms 3 and let them brown over high heat.

After a few minutes, season with salt and pepper 4, then continue cooking until they are tender and golden. Remove the garlic and thyme 5 and transfer the mushrooms to a bowl 6, setting them aside.

Put water on to boil for the pasta, and in the meantime, prepare the bean cream. Pour the boiled beans into the blender cup, add the dried chili pepper 7, a drizzle of oil 8, and a ladle of pasta water 9.

Season with a grind of pepper 10, a pinch of salt 11, and a few fresh thyme leaves 12.

Blend everything with an immersion blender 13 until you obtain a smooth and velvety cream 14. Pour the bean cream into the pan where you cooked the mushrooms 15.

Heat it gently 16. When the water boils, add the fettuccine 17 and cook them, draining two minutes before the indicated time 18.

Transfer them to the pan with the bean cream 19, add a bit of cooking water and a drizzle of oil 20, then toss until you achieve a creamy and enveloping consistency 21.

At this point, plate it: distribute the pasta on the plates 22 and top with the mushrooms 23. The pasta with bean cream and mushrooms is ready to be enjoyed 34.

Consume the pasta as soon as it's ready; if there are leftovers, store them in the refrigerator for up to one day.

The bean cream can be stored in the fridge for a couple of days.

Storage

In the cold months, dried or frozen mushrooms are also fine: just rehydrate them or sauté them well to remove excess water and keep the cream thick and creamy like the original version.
