PRESENTATION

No-Bake "Ice Queen" Birthday Cake layers Pavesini biscuits with a mascarpone and coconut yogurt cream, packed with fresh blueberries and tinted shades of blue with natural food coloring — a blueberry icebox cake assembled directly in the mold, no oven required. The blue is the whole point: it conjures the snowy, fairy-tale landscape the name promises, and contributor Loredana built the entire cake around that idea when she shared it on the GialloZafferano vodcast "Ti mando un vocale" as a birthday showpiece.

Marshmallow flowers and themed Pavesini carry the Ice Queen look across the surface, so the decoration lands as an extension of the layers beneath rather than an afterthought. Chilling rather than baking keeps the cream's color clean and lets the Pavesini soften into distinct, cohesive layers.

Preparation

How to prepare No-Bake "Ice Queen" Birthday Cake with Pavesini, Mascarpone and Blueberries

To prepare the No-bake "Ice Queen" birthday cake with Pavesini, mascarpone and blueberries, first combine the mascarpone and the coconut yogurt in a bowl, then add the powdered sugar 1 and the cream 2. Beat with electric whisks for a few minutes until the mixture is fluffy and firm 3.

At this point, divide the mixture into 3 bowls and set one aside, which will be used for the white cream 4. Color the second bowl with 3 g (0.11 oz) of spirulina coloring 5 and mix until you obtain a pastel shade 6.

Add the blueberries as well 7 and gently fold them in so as not to crush them 8. Set aside 9.

In the third bowl pour the remaining 9 g (0.32 oz) of spirulina coloring 10 and mix until you obtain a more intense blue 11. Set aside 12.

You can move on to the assembly. Quickly dip the Pavesini in the milk 13 and arrange them in an 8-inch square pan 14; you will need 34 of them. Once you have filled the base of the pan, spread the darker cream 15.

Smooth the surface 16, then place another 34 Pavesini slightly soaked in milk to form a second layer 17. Fill with the lighter-colored cream, enriched with the blueberries 18.

Level carefully 19 and finish with a final layer of 34 Pavesini soaked in milk. Finally cover the surface with the white cream 20. Smooth well and let set in the refrigerator for at least 2 hours 21.

Meanwhile you can prepare the decorations. Melt the white chocolate and decorate 4 Pavesini with 2 small drops using a toothpick 22, then place the eye-shaped sprinkles on top 23. On one of the two Pavesini, place a red sprinkle in the same way to act as a nose 34.

On the other one you can apply a carrot-shaped sprinkle 25. Spread the non-decorated side with the melted white chocolate 26 and join it to another Pavesino 27.

Set the decorations aside 28. Dip one end of the remaining Pavesini in the remaining melted chocolate 29 and place them on a tray lined with parchment paper, then immediately apply the colored snowflake-shaped sprinkles 30.

Put everything in the refrigerator 31. Finally, cut the marshmallows into 4 parts 32 and open them like a flower. Pour a drop of melted chocolate in the center and place a yellow sprinkle 33.

After the chilling time, take the cake out of the pan. Place the Pavesini decorated with snowflakes vertically all along the edge 34. Sprinkle the surface with shredded coconut 35 and place the 2 Pavesini with the eyes and the little nose on top 36.

Finish with the marshmallow flowers 37 and your No-bake "Ice Queen" birthday cake with Pavesini, mascarpone and blueberries is ready to be served 38 and sliced 39!
