McChicken® with Pecorino Romano builds the sandwich around its sauce — a sharp, salty Pecorino Romano DOP and black pepper sauce inspired by Roman cooking, spread over a crispy breaded chicken cutlet made with 100% Italian chicken breast. Crispy bacon adds a smoky, savory edge, and together the three components make for a chicken sandwich with pecorino sauce that lands with more intention than most.
The breading does real work here: it gives the cutlet a golden exterior while keeping the inside tender, and that contrast is what the whole thing hinges on. The Pecorino Romano DOP carries enough sharpness and salt that the sauce needs very little else — once it's on, it pulls the whole sandwich into focus. Straightforward to make at home, this is a copycat worth attempting.
To prepare the McChickenAE Il Romano, start with the sauce: heat the milk in a small saucepan and, meanwhile, crush the whole black peppercorns in a mortar 1. When the milk is lukewarm, turn off the heat and add the grated Pecorino Romano PDO 2 and the crushed peppercorns 3.
Briefly whisk to combine the cream 4. Set aside for the moment and prepare the mayonnaise: place the egg yolk and the vinegar in a bowl 5, then start whisking at high speed. When the mixture is homogeneous, slowly pour in the vegetable oil in a steady stream while continuing to whisk 6.
Continue working until you obtain a mayonnaise with a firm, stable consistency 7. At this point add the Pecorino Romano PDO cream 8 and briefly combine with a hand whisk 9. Cover the sauce with cling film pressed onto the surface and refrigerate until ready to use.
Move on to the batter: pour the flour into a bowl, then season with the grated lemon zest 10, the thyme 11 and the salt 12.
Also flavor with the marjoram 13 and the white pepper, then add the water 15.
Then add the beer 16 and gently whisk 17 until you obtain a smooth, lump-free batter 18. Set aside.
Now take care of the chicken: lightly pound the chicken breast with a meat mallet, then cut it horizontally in half 19 to obtain 2 thinner fillets 20. Finally, cut the fillets in half again 21 so as to obtain a total of 4 pieces of roughly the same size.
Coat the chicken first in semolina 22, then in the batter 23 and finally in the breadcrumbs 34. Place the cutlets on a tray and let them rest at room temperature.
Meanwhile arrange the bacon slices on a baking sheet, well spread out and spaced from each other 25, and grill in the oven for 5 minutes until crispy and golden 26. You're ready to fry the chicken: heat the vegetable oil in a small saucepan to a temperature of 338B0FNDE28093356B0F, then immerse one cutlet at a time 27 and fry until golden.
Meanwhile place the buns on the baking sheet with the cut side facing up 28 and grill for 3-4 minutes 29. As they are ready and evenly golden, drain the chicken cutlets on absorbent paper 3.
It's time to assemble the sandwiches: place the bottom half of the bun on a cutting board 31, then place a chicken cutlet on top 32 and 2 slices of bacon 33.
Add the Pecorino Romano PDO sauce 34 and cover with the top bun 35. Repeat in the same way to assemble the other sandwiches. Your McChickenAE Il Romano is ready to be enjoyed 36!
