How to prepare Gluten-free savory biscuits

To prepare gluten-free savory biscuits, pour the corn flour and rice flour into a large bowl 1. Add the grated Grana Padano PDO 2 and salt 3. Mix the dry ingredients with a spoon.

Add the egg 4 and combine it with the mixture 4, then add the butter 5 and quickly knead with your hands 6.

At this point, add the chopped rosemary 7 and chopped olives 8 and knead with your hands to incorporate them into the mixture 9.

Place the obtained dough on a work surface dusted with corn flour and also flour it on the surface 10, then roll it out with a rolling pin 11 to form a rectangle 1/8 inch thick. Cut out the biscuits using a cookie cutter 2 1/3 inches in diameter, reshaping the scraps and rolling them out again to form more biscuits: with these quantities, you should obtain about 22 12.

Place the biscuits on a baking sheet lined with parchment paper 13 and bake in a preheated fan oven at 356°F, placing it on the middle rack. When they are golden, remove your gluten-free savory biscuits from the oven 14 and let them cool slightly before serving them 15!

Storage

The gluten-free savory biscuits can be stored at room temperature for about 3 days.

Advice

Instead of olives, you can use sun-dried tomatoes or diced salami to enrich your biscuits!
