Fresh liquid cream ½ cup (125 ml)
Whole milk 2 ½ tbsp (37.5 ml)
Vanilla bean ½
Sugar 9 tsp (37.5 g)
For the chocolate sauce
Dark chocolate 3.5 oz (100 g)
Water 1 oz (30 ml)
Fresh liquid cream 2 tbsp (30 g)
Preparation

How to prepare Chocolate Pears

First, prepare the Vanilla Sauce: pour the cream and milk into a saucepan; cut the half vanilla bean lengthwise, scrape out the seeds, and add them to the cream and milk along with the vanilla bean. Heat the mixture for at least 20 minutes on low heat 1. Separately, beat the egg yolks with the sugar 2 until they become a frothy cream, then slowly pour in the milk and cream while straining through a sieve 3.

Mix the two mixtures with a whisk 4 and place everything back on the heat 5; thicken the sauce on low heat without bringing it to a boil (it should not exceed 181°F). When ready, place it in a large bowl and cover with plastic wrap. Once cold, you can transfer it to a container with a spout 6.
