PRESENTATION

If you’re looking to capture the cozy flavors of autumn, the bonet alle castagne is a must-try. Really, it's something special. This tasty twist on the traditional Piedmontese dessert adds a seasonal touch with chestnuts—super tasty and perfect for when the leaves start turning. People in Northern Italy love it. The bonet recipe sticks to the heart of the original, with its creamy, velvety texture and caramelized top. And such a comforting blend of flavors, like a classic Italian pudding. And the chestnuts? They’re cooked and blended into the mix, harmonizing with cocoa powder and those amaretti cookies. It gives a sweet, slightly nutty flavor.

Each bite feels cozy and special, with a caramel layer that turns sticky and golden. I mean, who doesn’t love that? Meanwhile, the inside stays moist and tender. No question, folks in Piedmont love serving it during cooler months—it brings together the best of the season with a rustic vibe. But once flipped onto a plate, it shows an elegance that's seriously hard to resist.

An Italian dessert with chestnuts like this is just perfect for any autumn gathering—or when you want something unique after dinner. Plus, the old-school technique of baking in a bain-marie ensures that extra-smooth, silky texture. I gotta say, the chestnut puree adds depth, pairing beautifully with the hint of bittersweet cocoa, while the crumbled amaretti cookies give a touch of almond that makes the whole dessert pop.

This chestnut bonet is more than just average pudding—it's really, really something else. The mix of ingredients and soft, creamy inside make it super hard to resist. Piedmontese families might each have their own twist, pretty much, but the use of chestnuts, cocoa and those cookies tie them all together. Whether you're sharing it with friends or enjoying a quiet evening, bonet with chestnuts is the kind of treat that makes everyone feel welcome—pretty simple—and a bit spoiled, capturing the warmth and tradition of Piedmont in every bite. Seriously good.

How to prepare Chestnut Bonet

To prepare the chestnut bonet, first score all the chestnuts needed for the recipe, put them in a small pot with cold water and cook them for about 20 minutes from boiling. Once they are tender, drain them.

Let them cool slightly, then peel them 4 and set aside. In a bowl, pour the eggs and the yolk, then add the sugar 5 and the amaretto liqueur 6.

Add a pinch of salt 7 and mix well with a hand whisk 8. Sift the cocoa into the bowl 9.

Mix again with the whisk 10, then slowly pour in the milk 11. Crumble the amaretti with your hands, adding them directly to the mixture 12.

Mix again with the whisk 13, then add 7 oz of peeled, cooked, and crumbled chestnuts 14. Mix one last time 15.

Now prepare the caramel: in a saucepan, pour the sugar and water 16, then heat over medium-low heat without stirring until the mixture turns amber 17. When the caramel is ready, distribute it evenly inside 10 disposable aluminum molds, with a capacity of 4 oz each 18.

Crumble 3.5 oz of cooked and peeled chestnuts into the molds 19, then pour in the bonet mixture 20, filling almost to the edge of the mold 21.

Transfer the molds to a baking dish and cook in a water bath: add boiling water to the baking dish to reach halfway up the sides of the molds 22 and bake in a preheated static oven at 300°F for about 60 minutes. After this time, open the oven and check the cooking. If the mixture still appears somewhat liquid when you move the mold, extend the baking time by 10 minutes. At this point, take them out of the oven 23 and carefully remove the molds from the baking dish. Let them cool completely at room temperature 34, then transfer to the refrigerator for at least 6 hours.

Once cold, to unmold the bonet more easily, quickly heat only the base with a torch, or dip the base of the mold in hot water for a few seconds. Gently turn it over onto a serving plate 25. Decorate by crumbling the remaining amaretti and chestnuts 26 and serve your chestnut bonet immediately 27!

Storage

You can store the chestnut bonet in the refrigerator for 2-3 days.

Freezing is not recommended.

Tip

Instead of amaretto liqueur, you can use rum or orange juice.
