PRESENTATION

A camembert galette brings together everything folks love about French food—rich cheeses, tender pastry, and that perfect mix of sweet and savory. And it's not the sugary kind like galette des rois. Nope, this is a savory tart that really stands out at any gathering. Start with a rustic, golden crust filled with creamy camembert—a French cheese famous for its soft texture and complex taste. Plus, here's the thing, the real star is the topping: caramelized onions simmered with Bordeaux wine. So so good. The deep, sweet flavor from the wine-soaked onions blends perfectly with the mellow, almost earthy notes of the cheese. Every bite feels a bit fancy yet super comforting, thanks to the flaky pastry and the way everything just melts together.

Across France, people make their own versions of this dish. So, you might find all sorts of twists—some swap out the cheese or try a mix of herbs, but the combo of baked camembert and tangy onions is tough to beat. And listen, pairing this kind of French cheese tart with a good bottle of wine isn’t just for show; it’s a huge part of what makes eating this feel special. Friends and family gather around, breaking off pieces of crispy crust and piling on extra onion compote. Seriously good. It’s the kind of food that makes you want to slow down and enjoy the company, maybe argue a bit about which region’s galette is best, or which wine goes with which version.

The onion galette isn’t just a dish—it’s a whole vibe, full of moist, melty cheese and layers of flavor that taste a little bit different every time you make it. For anyone who loves a rustic galette recipe that brings people together, this is the kind of thing that always gets folks talking and reaching for seconds. Whether it’s a quiet night in or a lively dinner party, this galette makes everything feel a bit more special and a whole lot more delicious. And you know what? You can't go wrong with that.

How to prepare Camembert and Bordeaux Onion Galette

To prepare the spelt galettes with camembert and Bordeaux onions, start with the dough. In a bowl, pour the whole spelt flour and water 1, then the oil 2, the salt, and start kneading 3.

until you have obtained a homogeneous dough that you will let rest in the fridge for about half an hour 4. After the time has passed, retrieve the dough and divide it into two pieces 5. Begin to roll them out, one at a time, with the help of a rolling pin on a lightly floured surface, obtaining a thin sheet about 9 inches 6.

In the middle of the sheet, place a cheese form 7, superficially cut 8, and then scent with sage, oregano, and rosemary 9.

Do the same with the other part of the dough and close it. Then place the galettes on a baking sheet lined with parchment paper and drizzle the surface with a drop of oil 10. Bake in a ventilated oven, preheated to 350°F, for about 25-30 minutes + a couple of minutes of grill 11. In the meantime, you can take care of the onions, peel them and slice them thinly 12.

Do the same with the shallots 13. Now, move to the stove. In a saucepan, heat a drop of oil together with sage, rosemary, and cinnamon 14. After a few minutes, add the onions and shallots and continue cooking for a moment 15.

before adding the sugar and letting it caramelize 16. Deglaze with Bordeaux and let it cook for 10 minutes 17. At the end of cooking, remove the aromas and let them cool slightly 18.

At this point, you should have everything ready, both the galettes and the onions. On the slightly cooled galettes, pour some of the onions 19, garnish the surface with thyme 20, and serve your camembert and Bordeaux onion galettes accompanied with honey and fruit 21.

Storage

It is not recommended to store the Camembert and Bordeaux Onion Galette as the crust and cheese may lose consistency.
