INGREDIENTS

INGREDIENTS FOR ABOUT 40 FRITTERS:

  • Type 00 flour 2 cups (300 g)
  • Eggs 4
  • Whole milk ¼ cup (50 g)
  • Sunflower seed oil 3.3 tbsp (50 g)
  • Lemon juice 3 ½ tbsp (50 g)
  • Sugar 6.8 tbsp (85 g)
  • Baking powder 3 ¼ tsp (16 g)
  • Lemon peel 1

FOR FRYING:

  • Sunflower seed oil 4 ¼ cups (1 l)

FOR GARNISH:

  • Sugar to taste
  • Lemon peel 1

PREPARATION

  1. Combine the eggs, milk, seed oil, and lemon juice in a large bowl. Add the sugar and mix with a whisk, then add the baking powder.
  2. Add the flour and mix until you get a smooth, creamy mixture. Add the grated zest of one lemon and incorporate it with a spatula.
  3. Heat the seed oil in a large pot until it reaches 320°F (160°C). Shape the fritters by sliding one spoonful of batter at a time into the oil, using another spoon to help.
  4. Fry the fritters for 3-4 minutes, turning them with a skimmer until golden, then drain them on frying paper. Continue until you have used up the batter: you will get about 40 fritters.
  5. Mix the sugar with more grated lemon zest in a bowl. Place some of the still-hot fritters in the bowl and roll them well to coat them in sugar.
  6. Transfer the fritters to a serving plate, add a little more grated lemon zest, and serve them warm.

THE EXTRA TIP

Check the oil temperature with a thermometer: it should not exceed 320°F (160°C), otherwise the fritters could brown too much and remain raw inside. If you do not have whole milk, you can replace it with 2% milk.
